Chebab (traditional saffron pancakes)

Ingredients

  • 2 glasses (320 g) of flour
  • 1 glass (160 g) of Oatsmith instant oatmeal
  • 1 tbsp of yeast
  • 1/4 glass (40 g) of sugar
  • 1/2 tsp of salt
  • 1/4 tsp of saffron
  • 1/2 tsp of ground cardamom
  • 1 glass (200 ml) of milk
  • 2 eggs
  • vegetable oil for frying
  • For serving:
  • cooking butter (ghee)
  • honey
  • berries

Cooking instructions

  • 1 Mix the flour, oats, sugar, salt, yeast in a bowl. Mix well.
  • 2 Heat the milk to 35-40 °С. Add the warm milk to the flour mix.
  • 3 Whisk the eggs with spices in a different bowl and add them to the batter. Mix the batter well until its texture resembles yogurt. Add water as necessary.
  • 4 Cover the bowl with a towel and leave in a warm place for 1 hour.
  • 5 Heat the frying pan and put oil on it. Pour a ladle of batter onto the pan and fry chebabs over medium heat for 4-5 minutes on both sides until golden brown. Serve with ghee, honey, and berries.
